I’m the PR representative for Naniwa Soba, the original soba-shabu restaurant, at the Shinsaibashi Main Store!
This time, I’d like to talk a little about “dashi,” which is the foundation of everything…
Mornings at Naniwa Soba begin with our chefs preparing the broth.
The broth we use at our restaurant is,
Purely domestically produced Soda bonito flakes, characterized by their rich, deep flavor and aroma,
Saba bushi, characterized by the sweetness of its fat and its rich umami flavor,
These three varieties of urume bonito flakes are characterized by their mild odor, rich aroma, and deep, lingering flavor, and
We take our time to make delicious, artisan-style broth.
The broth is made to bring out the full flavor of the dried fish, but,
Isn't it pretty rare to find broth that doesn't use kelp?
It has a rich, flavorful broth that evokes a sense of nostalgia.
