Just from the name alone, it’s quite difficult to imagine what “soba sushi” looks like—but as the name suggests, it’s sushi made with soba noodles instead of rice.

Toss the boiled soba noodles with vinegar, spread them out on a sheet of nori, and then roll them up with the fillings.
The fillings are the same as those used in rolled sushi, such as cucumber and shredded omelet.

Please enjoy the finished soba sushi with soba dipping sauce and wasabi.
