"Naniwa Soba's" Commitment to Noodles and Broth

Hello.
I'm the PR representative for Naniwa Soba Shinsaibashi Main Store, the original home of soba shabu.
With each rain shower, the spring-like weather grows more pronounced—how are you doing?
Located just a 1-minute walk from Shinsaibashi, "Naniwa Soba" is a Japanese restaurant where you can enjoy carefully crafted handmade soba noodles and authentic shabu-shabu hot pot.
Our commitment to quality ingredients is what makes our soba so delicious.
"Freshly ground," "freshly made," "freshly boiled"
Our soba, which allows you to savor the natural flavors, is made using our own flour, ground from whole buckwheat grains using a stone mill.
"Lively magnetically activated water" and "body-friendly natural salt," along with our meticulous attention to every single ingredient, come together to create delicious noodles.
Our Commitment to Dashi
Our delicious, flavorful artisan broth is made using three types of 100% domestically produced fish flakes: , , and .
This clear, amber-colored broth, rich in flavor and umami, offers a deep, complex taste that is sure to evoke a sense of nostalgia.

Hot pot dishes you can only enjoy at “Naniwa Soba”
A hot pot that brings out the flavors of carefully selected shabu-shabu and soba
●Soba Shabu
The registered trademark “Soba Shabu” refers to a shabu-shabu hot pot featuring “Wagyu” beef and “soba” noodles.
Please enjoy our carefully selected Japanese beef, rich in umami, and our flavorful soba noodles, served with our signature broth.
You can enjoy it with a variety of condiments, such as soba miso.
●Shabu-shabu with Soba Dipping Sauce
For the broth in our soba-tsuyu shabu-shabu hot pot, we use Naniwa Soba’s special, aromatic sauce.
To finish, place some soba noodles in the “shabu-shabu strainer” and dip them into the broth, which is packed with umami, before enjoying.
If you're ever in the area, please be sure to stop by our store.
We sincerely look forward to your visit.
