I'm the PR representative for Naniwa Soba Shinsaibashi Main Store, the original home of soba shabu.

It’s that time of year when the fields and mountains are tinged with the color of young grass, and you can feel the breath of early spring here and there.

In this blog post, we’d like to introduce our restaurant’s signature soba dishes.

Please enjoy this rich, flavorful broth, made with a focus on "freshness" and "umami."

"Live" magnetically activated water, natural salt that's gentle on the body, and homemade flour ground in a stone mill.
Each of these ingredients contributes to creating delicious "noodles."

Please be sure to try our delicious soba—freshly ground, freshly made, and freshly cooked.

~Soba Menu~
◆Fleshing Out
This is our signature soba dish. It’s served with a light broth.
First, enjoy it as is. Next, add the fried burdock root for a savory flavor. Finally, add a raw egg to enjoy a rich, mellow taste.
Please choose one of the following toppings: chili oil, premium sesame, or yuzu pepper.

◆Meat Soba
This hearty bowl of soba is packed with the rich flavor of pork that has infused the broth.

◆Sudachi Soba
This is a refreshingly fragrant bowl of soba topped with plenty of sudachi.

◆Beef Shabu-Shabu Soba
This is a slightly indulgent bowl of soba made with domestically raised beef.

What we've introduced here is just a small selection; we also offer a wide variety of other soba dishes.
