~No Compromises on the Broth~
At the Naniwa Soba Shinsaibashi Main Store—the original home of soba shabu—the morning begins with our artisans preparing the broth. We blend three types of pure Japanese-grown bonito flakes—Soda bonito, mackerel flakes, and round herring flakes—in our own unique ratio, and by investing plenty of time and care, we create a broth rich with concentrated umami.
Please take your time to savor our signature broth, which evokes a sense of nostalgia. With dishes that reflect the changing seasons, you’ll be able to get a head start on enjoying the flavors of fall.
Just a 1-minute walk from Shinsaibashi, the Naniwa Soba Shinsaibashi Main Store—the original home of soba-shabu—welcomes you with carefully crafted soba noodles that bring out the natural flavors of the ingredients. If you’re in the area, please feel free to stop by.
Our entire staff sincerely looks forward to welcoming you.
